I recently discovered the Mug Muffin! ….and I love it!
So quick, easy and healthy.
And very filling too 🙂
Ingredients
- 1 medjool date
- 1/4 cup semolina (or oats if you prefer)
- 1 Â egg
- 1 medium banana
- sprinkle of cinnamon sugar
- drizzle of vanilla extract
Method
- mash banana in microwave friendly bowl/mug
- add egg and mix
- tear up date and add then mix
- add the rest of the ingredients and mix
- microwave for 2 mins
- remove mug muffin by turning the mug upside down
- add a dollop of coconut yoghurt (that’s my preference)
- make it pretty with a sliced strawberry
- Enjoy!!
